8 cups baby spinach leaves
1 small carrot, peeled and shredded
1 cup sweet onion, sliced thin
1/4 cup bacon bits
1/3 cup pineapple juice, unsweetened
2 Tbsp. vinegar
1 Tbsp. olive oil
2 tsp. soy sauce
1 tsp. dry mustard
1/2 tsp. curry powder
Salt and pepper to taste
4 eggs, hard boiled and sliced thin
Combine lettuce, carrot, onion and bacon bits in a large bowl. Combine pineapple juice, vinegar, olive oil, soy sauce, dry mustard, curry powder and salt and pepper in a small saucepan. Bring to a boil and then pour over lettuce mixture. Toss well and garnish with egg slices. Serve immediately.
The Skinny: Use low fat bacon bits. You can probably get away without the eggs but they do add a nice touch.
