Summer Squash and Zucchini Casserole

Ingredients
2 med yellow summer squash, diced
1 med zucchini, diced
1 small onion, chopped
1 1/2 cups Monterey Jack cheese, shredded
1 cup grated cheese
1 1/2 cups milk
2 eggs, beaten
1 cup instant rice
1/2 TSP SALT
1/8 TSP PEPPER
1/2 TSP ITALIAN SEASONING

Directions
Combine all ingredients in a large bowl, mix well.
Pour into greased 9 inch square baking dish. Bake at 375 for 35 minutes or until liquid is absorbed and the cheese is lightly browned. Yield: 6 servings
