Shrimp Cocktail

1 cup catsup
Juice of 2 limes
1 small onion, chopped
1/2 cup fresh cilantro, chopped
1 tsp. hot sauce
1 clove garlic, minced
2 pounds large shrimp, cooked and chilled
1/2 head of iceburg lettuce
6 - 8 parfait glasses
Lemon slices

Combine first 6 ingredients and mix well. Arrange a few iceburg lettuce leaves around inside of each parfait glass. Hang six to eight shrimp around the side of each glass with the large end of the shrimp in the glass and the little end hanging over the edge. Spoon about 2 Tbsp.of the sauce in the middle of each glass. Garnish with a lemon slice. For added zing; add some prepared horseradish to the sauce. Anybody can dump some shrimp in one bowl and some sauce in another and call it an appetizer. Here, the key is presentation so put on your chef's hat and really try to make these cocktails look nice.
