Rhubarb Cobbler

1 cup sugar
1 cup flour
2 tsp. baking powder
dash of salt
2 T. vegetable oil
3/4 cup milk
3 cups rhubarb (cut into bite size pieces)
1 cup hot water
1 cup sugar

In a large bowl, combine 1 cup sugar, flour, baking soda, salt, vegetable oil and milk; mix well. Pour into greased 13×9-inch baking dish. In separate bowl, combine rhubarb, 1 cup sugar and hot water until sugar is dissolved. Pour over flour mixture and bake at 400 degrees 20 to 30 minutes, or until cobbler is medium brown. May be served with ice cream, or cool with whip topping.
