Pumpkin Pecan Nut Bread

Ingredients

1 cup solid pack pumpkin
1/2 cup sugar
1/2 cup buttermilk
1 egg
1-1/2 cups sifted all-purpose flour
1-1/4 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
2 tablespoons butter, softened
1 cup chopped pecans

Directions
Preheat oven to 350 degrees F. Grease loaf pan; set aside. Combine pumpkin, sugar, buttermilk and egg in large bowl. Sift flour, bakig soda, salt and spices into medium bowl. Stir into pumpkin mixture with butter until well blended. Stir in pecans. Pour into prepared loaf pan. Bake 1 hour or until wooden pick inserted in center comes out clean. Remove from pan. Cool on wire rack 10 minutes. Serve warm or cool completely. Makes 1 loaf FOR MUFFINS: Spoon evenly into greased muffin cups. Bake 25 to 35 minutes or until wooden pick inserted in center comes out clean. Remove from pan. Cool on wire rack 10 minutes. Serve warm or cool completely.
