Potato and Ham Soup

2 to 3 cups of ham, cut in 1/4-inch pieces
9 medium potatoes, cut into small pieces
4 carrots cut up
2 chopped onions
2 chopped stalks of celery
3 T. fresh chopped parsley
1 large can of evaporated milk
1 cup of ham juice left from cooking the ham
(or bouillon or soup starter)

In a large pot, pour in the ham juice, three quarts of water and all the ingredients except milk. Cook for about an hour and add the milk just before serving.
