Pita Bread With Crab Filling
1-cup celery, chopped
10 green or black olives, sliced
6 scallions, chopped
2 Tablespoons bread crumbs
1/4-cup non-fat yogurt
1/4-cup non-fat mayonnaise
Pepper to taste
1 - 6 ounce can crab meat (rinse well) or 1 - 4 ounce can shrimp
2 pieces pita bread, cut in half
4 teaspoon Parmesan cheese, grated
1. Combine first seven ingredients in large skillet, stirring over medium heat until mixture is bubbly. Reduce heat, add crab and continue simmering 3-5 minutes.
2. Spoon into heated pita bread halves. Sprinkle each with 1 teaspoon Parmesan. Makes: 4 Sandwiches
