Peach Cobbler

1-3/4 cups granulated sugar
2 tablespoons cornstarch
1/2 teaspoon ground cinnamon
1 cup water
2 tablespoons butter
5 cups fresh peaches-peeled, sliced
1 cup pastry flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1/4 cup shortening
1/2 cup light cream
1/2 teaspoon vanilla

Blend 1 cup sugar, cornstarch and cinnamon in the water. Bring to a boil, stirring constantly. Whip in the butter and stir in the peaches. Pour into a shallow buttered 9 x 9 baking pan. Sift the flour, baking powder, salt together. Stir in the remaining ingredients until very light and smooth. Spread over peaches. Bake in a preheated 350 degree F. oven for 35 minutes or until golden brown. Serve warm, with cream.
