One Pan Jambalaya

Ingredients

vegetable cooking spray
1 tablespoon olive oil
2 cups onion — chopped
1 cup celery — chopped salt — to taste
cayenne pepper — to taste
2 pounds smoked turkey sausage (comes in a long coil)
4 bay leaves
19 ounce can diced tomatoes
14 ounce can tomato sauce
1 tablespoon garlic — chopped
2 cups white rice — uncooked
6 cups chicken broth
1 teaspoon thyme parsley for garnish
Cut sausage into 1/2-inch pieces.

Directions

Cut sausage into 1/2-inch pieces.
Spray a very large skillet with vegetable cooking spray. Add 1
tablespoon of oil and sauté the onions and celery for 5 minutes. Season with
salt and cayenne pepper.
Add sausage and cook for 2 more minutes. Add bay leaves, diced
tomatoes with juice, tomato sauce and garlic.
Stir in the rice and cook for 2 minutes. Add the chicken stock
and thyme and bring to a rapid boil, then cover and simmer, stirring
occasionally, for 30-45 minutes or until the rice is tender. Garnish with parsley.

Notes

Start with 6 cups of chicken stock and then add more if needed as the liquid cooks down
