Jelly-Filled Muffins

1 3/4 cup flour
1/2 cup sugar
1 tablespoon baking powder
pinch of salt
2 eggs
1/3 cup butter (melted)
2/3 cup milk
1/2 cup jelly or jam of choice
1/2 teaspoon grated lemon peel

In a large bowl, mix the flour, sugar and baking powder and salt. In a small bowl beat the eggs slightly, then add the milk and butter. Pour into dry ingredients and stir till moistened. Spoon half of the batter into 12 paper-lined or greased muffin cups. Make a well in the center of each muffin and add the jelly. Spoon remaining batter over the jelly. Bake at 375 degrees for 25 minutes or until golden.
