Jammin Shrimp & Rice
1 cup chopped green or red bell peppers
1/2 cup chopped onion
2 cloves garlic, minced
1 tablespoon vegetable oil
2-1/2 cups cooked rice
1 cup College Inn Chicken Broth
1/2 cup Heinz Tomato Ketchup
1/2 teaspoon hot pepper sauce, or to taste
1 pound medium raw shrimp, peeled, deveined
Cook and stir onion, bell peppers and garlic in oil until tender.
Stir rice, broth, ketchup and hot pepper sauce.
Simmer 2 to 3 minutes.
Cook, uncovered, 3 to 5 minutes or until shrimp turn pink. Sprinkle with chopped parsley.
