Italian Style Summer Squash
1 large summer squash
1 med zucchini
1 large onion
2 large tomatoes
1/2 tsp salt
1/2 tsp pepper
1/3 cup grated cheese
3 tbsp margarine
Slice vegetables into 1/4 inch slices.
In a glass casserole dish, layer: Squash, zucchini, onion, tomato, salt & pepper, pat of butter and sprinkle cheese lightly to cover. Repeat layering until dish is full. Bake in microwave oven, on high for 8 minutes
Bake in Conventional oven at 350 for 45 minutes
cover for the first 35 and remove cover for the last 10 minutes to brown cheese. Yield: 4-6 servings
This is a very liquid casserole. Also good over rice.
