3 egg whites
6 cups confectioner's sugar
Red and green food coloring
1/2 teaspoon peppermint extract
1/2 teaspoon spearmint extract
Beat egg whites until stiff; adding sugar gradually. Divide candy into 2 portions. Tint half green and half red. Add peppermint extract to red mixture and spearmint extract to green mixture. Roll candy between 2 pieces of waxed paper. Cut with small round cookie cutter. Let dry overnight.
