Healthy Banana-Walnut Muffins

2 cups oat bran flakes cereal
1-1/2 cups mashed ripe bananas (about 3 medium)
1/2 cup buttermilk
1/4 cup butter, melted
1 egg
1-1/2 cups all-purpose flour
1/4 cup packed brown sugar
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 cup chopped walnuts

Preheat oven to 400 degrees F. Grease or paper-line 12 (2-1/2 inch) muffin cups; set aside.
Combine cereal, bananas, buttermilk, butter and egg in medium bowl. Let stand 5 minutes. Combine flour, brown sugar, baking powder, cinnamon and baking soda in large bowl. Add cereal mixture to flour mixture, stirring just until moistened. Spoon evenly into prepared muffin cups. Sprinkle with walnuts.
Bake 20 to 22 minutes or until wooden pick inserted in center comes out clean. Remove from pan. Cool on wire rack 10 minutes. Serve warm or cool completely.
Makes 12 muffins


To freeze muffins, wrap tightly with foil orplace in airtight container
