8 to 12 fresh spinach leavees
1 package (6 ounces) fat-free smoked ham lunch meat (8 slices)
1/2 of 8 ounce package soft cream cheese with chives and onion (about 1/2 cup)
2 teaspoons dried dill weed
Additional dill weed
Rinse spinach, shaking off excess water. Wrap leaves in a double thickness of paper towels. Microwave at 100% power (700 watts) 45 to 60 seconds until wilted. Cool slightly, then unwrap and separate into individual leaves; set aside.
Spread each slice of ham with 1 tablespoon of the cream cheese; sprinkle each with 1/4 teaspoon dill weed. Place spinach leaves on each ham slice, positioning the leaves to cover the surface. Roll each ham slice tightly; wrap each roll in plastic wrap. Chill at least 1 hour.
To serve, cut in 1/2 inch slices with a sharp knife. Place slices cut-side-down, on serving plate and sprinkle with additional dill weed. Serve or cover with plastic wrap and refrigerate up to 2 hours before serving. Makes about 48
These can be made ahead up to 24 hours. Slice just before serving and sprinkle with dill weed.
