1 package (3 ounce) Jell-O brand gelatin, peach flavor
1 cup boiling water
1 container (4 ounce) Cool Whip non-dairy whipped topping, thawed
14 double graham crackers, separated
Dissolve gelatin in boiling water and chill until slightly thickened. Fold in whipped topping. Spread gelatin mixture about 1/2 inch thick on 14 of the crackers; top with remaining crackers, pressing lightly and smoothing around edges with spatula. Freeze until firm, about 3 hours.
