Crab Puffs

3 Eggs, separated
1 (6-ounce) can Crab Meat, drained, rinsed
1 teaspoon Lemon Juice
2 tablespoons Green Onions, sliced
1 tablespoon Pimiento, chopped
1/4 teaspoon Salt
Dash Cayenne Pepper
2 tablespoons Mayonnaise
2 teaspoons Dijon Mustard
8 to 10 Slices Whole Wheat Bread, crusts removed
1/2 cup shredded Monterey Jack Cheese
Sliced Ripe Olives

In a medium bowl, beat egg yolks until thick and lemon-colored. Blend in crab meat, lemon juice, green onions, pimiento, salt, cayenne pepper, mayonnaise, and mustard. In a medium bowl, beat egg whites until stiff but not dry; fold into egg yolk mixture. Spread about 1/4 cup mixture on each bread slice; place on ungreased cookie sheet. Sprinkle each with cheese and garnish with olive slices. Bake at 350 degrees for 15 to 20 minutes or until lightly browned and puffed. Cut each bread slice into 6 pieces; serve warm. Makes 48 appetizers
