1 cup cornmeal
8 oz sour cream
1 sm onion; minced
1 stick butter or marg
1 T. sugar
1 - 15 oz can of cream style corn
Bake at 400 degrees until brown. This will still be doughy and will look as if its not done. When cool, break/crumble into small pieces.
1 bell pepper; chopped (use any color of pepper)
1 cup onion; chopped
1 cup tomates; chopped (use more if desire)
1 cup sweet salad cubes
Layer this mixture with cornbread
Mix together 1 tablespoon sugar and 1 cup mayo. Spread on top. Sprinkle with mild cheddar cheese. Store in regfrigerator.
This is a great recipe to take somewhere as it is very tasty and most unusual. It looks its best when served in a glass or clear plastic bowl. Is a great recipe to make in the summertime when tomatoes and pepper are in season. Hope you enjoy!
