Confetti Meat Loaf
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1 tablespoon olive oil
1 cup Heinz Tomato Ketchup
1-1/2 pound lean ground beef
1/2 cup seasoned dry bread crumbs
1 egg, slightly beaten
1/2 teaspoon salt
1/4 teaspoon pepper
Cook and stir onion, celery and bell pepper in oil until tender-crisp; stir in ketchup.
Combine 1/2 cup ketchup mixture with beef and remaining ingredients.
Shape into an 8 x 4 inch loaf in shallow baking pan.
Bake in 350 degrees F. oven 1 hour; let stand 5 minutes before slicing.
Serve with remaining ketchup mixture, cold or heated.
