Chili – Beef Salad
1 lb. ground beef or bulk sausage
1 Medium onion, chopped (1/2 cup)
1 7 1/2-ounce can tomatoes, cut up
1/4 cup catsup
1 Tablespoon chili powder
In a large skillet cook beef or sausage and onion till meat is brown. Bring to boiling. Reduce heat and simmer, uncovered, for 8 to 10 mimutes or till disired consistency.
4 cups shredded lettuce
1 cup shredded cheddar cheese (4 ounces)
1 small can pitted and sliced ripe olives
1/2 of an 8-ounce carton dairy sour cream
Snipped cilantro or parsley
Tortilla chips (optional)
Arrange lettuce on each of 4 plates. Spoon meat mixture over lettuce. Top with sour cream and cilantro or parsley. Serve with tortilla chips, if desired. Makes 4 Servings. Cool the spicy flavor of this taco-style salad with lots of sour cream. if you like a tinner dressing, stir a little milk into the sour cream. This is super fast and only takes about 20 min.
