Chicken Stew (Crockpot)

1-2 lbs. boneless skinless chicken breasts
16 oz.(approx.) chicken stock
1 small onion, chopped
2 1/2 C potatoes, peeled and cubed
1 celery stalk, sliced
2-3 medium carrots, sliced
1/2 tsp paprika
1/4 tsp pepper
1/4 tsp thyme
1 (6oz.) can tomato paste

Cut chicken into 1 inch cubes, place into crockpot. Place all other ingredients into crockpot. Cover and cook on high for 3-4 hours.
In a small bowl combine 1 TBS water and 1 TBS cornstarch. Stir into stew. Cover and cook for another 30 min. or until thickened.
