Cherry Banana Bread
1 jar (10 ounces) maraschino cherries
1-3/4 cups all-purpose flour
1/2 teaspoon salt
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
2/3 cup firmly packed brown sugar
1 cup mashed, ripe bananas
1 tablespoon raw brown sugar (optional)
1/3 cup butter or margarine, softened
Drain maraschino cherries, reserving 2 tablespoons juice. Cut cherries in quarters; set aside.
Combine flour, salt, baking powder and baking soda; set aside.
In medium bowl, combine butter, 2/3 cup brown sugar, eggs and reserved cherry juice; mix with electric mixer on medium speed unti ingredients are thoroughly combined. Add flour mixture and mashed bananas alternately, beginning and ending with flour mixture. Stir in cherries. Lightly spray 9 x 5 x 3-inch loaf pan with nonstick cooking spray. Spread batter evenly in pan. Sprinkle batter with raw brown sugar.
Bake in preheated 350 degrees F. oven about 1 hour, or until golden brown and wooden pick inserted in center comes out clean. Remove from pan and cool on wire rack. Store in tightly covered container or foil.
Makes 1 loaf, about 16 slices
