Cheese & Spinach Puffs

1 (10 ounce) package frozen chopped spinach
1/2 cup chopped onion
2 beaten eggs
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
1/2 cup bieu cheese salad dressing
1/4 cup oleo, melted
1/8 teaspoon garlic powder
1 (8 1/2 ounce) box corn muffin mix

In saucepan, combine spinach and onion; cook according to spinach package directions. Drain well, pressing out excess liquid; combine eggs, cheese, salad dressing, oleo and garlic powder. Add spinach mixture and muffin mix; mix well. Cover and chill. Shape dough into 1-inch balls. Cover and chill overnight. These can be frozen at this point, if you wish. To serve, place chilled or frozen puffs on a baking sheet. Bake at 350 degrees F. until light brown, 10 to 12 minutes. If puffs have been frozen, bake for 12 to 15 minutes.
