Caviar and Cream Cheese Rounds

1 package (3 ounces) cream cheese, softened
Few drops of lemon juice
White pepper
27 to 30 Melba toast rounds or crackers
1 jar (2 ounces) red caviar, drained
Very thinly sliced lemons
Parsley sprigs

In a small bowl, mix cream cheese, lemon juice, salt, and white pepper to taste.
Spread each toast round with about 1/2 teaspoon of the cream cheese mixture. Top with about 1/4 teaspoon caviar, a slice of lemon, and a sprig of parsley.
Serve or cover and chill up to 1 hour before serving. Makes 27 – 30
