Carrot and Pineapple Salad
2 cups carrots, grated
1 can pineapple tidbits, drained
1/2 cup raisins (optional)
1/2 cup mayonnaise
Place raisins in a small bowl and cover with boiling water. Let stand 5 minutes and drain well. Combine pineapple, carrots, and raisins. Cover and refrigerate. Stir in mayonnaise just before serving.
