Boeuf Bourguignon

3 pounds beef rump or chuck cut into 1 1/2 inch cubes
1 large carrot peeled and sliced
1 medium onion sliced
3 tablespoon flour
2 cups beef stock
1 tablespoon tomato paste
2 cloves garlic minced
1 tablespoon thyme
1 teaspoon tarragon
1 bay leaf
1/2 pound white onions peeled or 1 jar white onions
1 pound mushrooms sliced
1/2 cup red or burgundy wine

Heat skillet and coat with cooking spray. Brown beef, carrots and onion well. Add flour and beef stock. Mix well.
Transfer to crockpot. Add tomato past, garlic, thyme, tarragon, bay leaf and onions. Cover and cook on low 8-10 hours. Add mushrooms and wine about 1 hour before serving.
