Baked Tuna Casserole

1/2 cup butter or margarine
1 medium onion, chopped
1 clove garlic or garlic salt
1/4 teaspoon turmeric
1 cup raw rice
salt to taste
1 (10-3/4 ounce) can chicken broth
1 (12-1/2 ounce) can tuna, drained and flaked
chopped parsley for top

Preheat oven to 350 degrees F. In baking dish, melt butter, onion, garlic salt and turmeric; cook just until onion is transparent. Add rice and stir until rice is well coated with butter. Add chicken broth. Bring to a rapid boil. Add tuna; stir to mix well.
Cover and bake 30 to 40 minutes. Take out of oven and fluff with a fork. Sprinkle with parsley. Makes about 4 servings.
Double for larger recipe.
