Apple Cheddar Salad
2 small red apples, quartered and thinly sliced
2 tsp. lemon juice
2 cup thinly sliced celery
6 oz. mild Cheddar cheese, cut into small cubes
1/4 cup mayonnaise
dash of salt and pepper
Place apples in small bowl; toss with lemon juice. Add celery and next 4 ingredients. Toss to coat. Serve on lettuce-lined plate.
