Angel Hair Pasta with Beef (lowfat)
4 oz. of Beef
1/2 Bell Pepper
1 pinch of Oregano
1/4 tsp. of Italian Seasoning
1 pinch of dried Parsley
1 Tsp. of Low Fat or Non Fat Parmesan Cheese
2 oz. of Angel Hair Pasta (dry, uncooked)
1/2 cup of fresh chopped tomatoes
1/4 cup of Low Fat or Non Fat Ricotta
Prepare angel hair according to package directions, omitting fat and salt.
In large skillet, cook beef over medium heat until brown. Rinse beef under hot water to remove most of the fat, drain well. In skillet, cook tomato and bell pepper 2-3 minutes until pepper is softened. Add ricotta, angel hair, and oregano, Italian seasoning, parsley and beef and cook 3-4 minutes more.
Serve and top with parmesan cheese.
