Amaretto Chicken

4 8 ounce chicken breast boneless, skinless
1/4 cup peanut oil
1/4 teaspoon garlic powder
1/4 teaspoon curry powder
1/2 pound mushroom sliced
1/3 cup amaretto liqueur
1 tablespoon lemon juice fresh squeezed
1/2 teaspoon lemon peel
1 can chicken broth low sodium & low fat
1 tablespoon cornstarch

Cut chicken into 1 inch wide strips and sprinkle with pepper, garlic powder and curry powder mixture. Roll strips in flour. Heat peanut oil in large skillet and brown chicken pieces on all sides. Add mushrooms, amaretto, grated lemon peel and juice. Cover and simmer for 5 minutes. Mix chicken broth and cornstarch. Stir mixture into skillet and continue stirring over low heat until mixture bubbles and thickens. Serve over rice or noodles.
