Black Bean Burgers

Recipe Index:  Main Courses > Vegetable

Ingredients
2 15-oz. cans black beans, rinsed and drained
1 sweet onion, minced
2/3 cup breadcrumbs
1 clove garlic, minced
1 Tbsp. sweet basil
1 tsp. dried oregano
1 tsp. ground cumin
2 eggs
Salt and pepper to taste

Directions
Place black beans in a bowl and mash with a fork. Add remaining ingredients and mix well. Divide into 6 - 8 equal portions and shape into patties. Place patties on a medium-hot grill for several minutes per side. Serve with mint salsa. Now listen up, these bean patties may not stay together as well as your standard ground beef patties. You can greatly increase the chances of ending up with complete patties by grilling them in one of those wire baskets that you use to grill fish.
