Zucchini Boats

Ingredients
3 medium (6- to 8-inch) Zucchini
1/2 cup Cooked Chicken, diced
1 cup Cheddar Cheese, shredded
2 tablespoons canned Green Chilis, diced
1 1/2 cups Thick and Chunky Salsa

Directions
Cut zucchini in half lengthwise. Remove seeds and pulp, leaving 1/2-inch shell. (A melon baller works well to remove pulp.)

Chop the zucchini pulp. In a medium-sized bowl, combine chopped zucchini with chicken, half the cheese, the chilis, and half the salsa. Mix well.

Place hollowed zucchini shells in a microwave- safe dish. Mound zucchini mixture into shells. Top each shell with 1 tablespoon salsa. Cover with plastic wrap.

Microwave on high for 6 to 8 minutes or until the zucchini shells are crisp-tender, turning dish halfway through cooking (unless, of course, your microwave is equipped with a turntable).

Uncover; sprinkle evenly with remaining cheese, and microwave for 30 or 40 more seconds, until cheese is nicely melted.
