Pork Stir-Fry

Ingredients
1 lb. boneless pork loin, cut into 3/4 cubes
1 medium onion, cut into wedges
1 green pepper cut into strips
1/2 lb. fresh mushrooms, sliced
1 can(5oz) water chestnuts, sliced
1 can(5oz) bamboo shoots
1 Tbsp. cornstarch
3 Tbsp. lite soy sauce
1 Tbsp. cold water
1/4 tsp. garlic powder
Hot Cooked Rice

Directions
In a skillet or wok coated with non-stick cooking spray, stir-fry the pork until no longer pink, about 4 minutes. Add mushrooms, onions, green pepper, water chestnuts and bamboo shoots; stir-fry for about 3 minutes. In a small bowl, combine
cornstarch, soy sauce, water and garlic powder, blend until smooth. Add to the skillet. Bring to a boil; cook and stir for 1 to 2 minutes or until thickened and bubbly. Serve over rice.
