Carob Chip Cookies (Diabetic)Recipe Index: Desserts > Drop CookiesIngredients 1 1/2 C Flour 3/4 tsp baking powder 1/2 t salt (I leave this out) 3/4 C margarine 1/2 C fructose granulated 1 egg 1 tsp vanilla 1/c unsweetened carob mini chips Directions Combine flour, baking powder, and salt in mixing bowl. Cream margarine and fructose; beat in egg and vanilla. Gradually add flour to creamed mixture. Stir in carob chips. Drop onto an ungreased cookie sheet. Bake at 350 for 8-10 min. Yield 1 1/2 doz. Notes I didn't like the looks of drop cookies because they don't spread when baking. Instead I prefer to roll in small walnut sized ball, flatten with a fork like you do for peanut butter cookies. They come out in a more pleasing appearance. I also added a few chopped pecans |
