Rhubarb TorteRecipe Index: Desserts > Cakes1 cup flour 1/2 cup butter -- softened 5 tbsp powdered sugar 2 large eggs -- well beaten 1/4 tsp salt 3/4 tsp baking powder 1 cup sugar 1 tsp vanilla 3 cups rhubarb -- diced Directions Cream the flour with the butter and powdered sugar. Press into the bottom of an 8x8 inch cake pan. Bake for 12 minutes in a 350 degree oven. Combine the remaining ingredients and spread over the crust. Return to the oven and bake 40 minutes more. Serve warm or cold. Serve with vanilla ice cream, whipped cream, or alone. |
